Not on the Top 5 list of most people’s favorite veggie list. Or favorite food period.
I’ve managed to find a way to make brussels sprouts taste yummy for everyone – including my kids!
This dish takes 5-7 minutes from start to finish and it makes a really quick and easy side dish. All you need is shredded brussels sprouts (I found them at my local fresh grocery store), diced pancetta, shredded cheese, salt, pepper and a little bit of cooking oil (I use grape seed oil). If you can’t find pre-packaged shredded brussels sprouts, take fresh sprouts and shred / chop them in a magic bullet type device.
1. Add about 2 teaspoons of oil in a large saute pan and add 1-2 cups (the package I bought was 10 ounces) of shredded brussels sprouts and cook over a medium heat for 3-4 minutes.
2. Then place the entire package of diced pancetta, salt and pepper to taste and continue to stir over low heat for about 2 minutes or the pancetta starts to cook through and the brussels sprouts are starting to become soft (almost looking like cooked lettuce).
3. Next, add a few teaspoons of water and then cover the pan for 1 minute to let the brussels sprouts finish cooking via steam. Reduce heat to low.
4. Uncover and spread with shredded cheese. Turn heat off and mix cheese, brussels sprouts and pancetta mixture together.
Plate and add more cheese as a garnish!
The best part for us? No sugar (outside of the natural sugar contained in the sprouts)!
My kids love it – although they love most things that I can add shredded cheese to! My oldest knows that its brussels sprouts – my youngest gets freaked out by the word so I tell her that her plate has beans in it instead.
